I
n our farm, food is respect for the land and the territory. They say that good cuisine wakes up every morning not knowing what dishes it will prepare for midday.
Good cuisine goes to the market and studies the stalls, identifies the freshest vegetables, the best cheese in the area, the fragrant fruit… and only then decides what to bring to the table. It is precisely this philosophy that inspired us on how to organize the KITCHEN at Fattoria Zivieri.
The market stalls are replaced by our vegetable garden, the dairy, the farms: most of the products offered in our dishes come from our farm and for the rest we use of the collaboration of local producers.
The meat and cured meats, the spearhead of our culinary proposal, are all from the Zivieri closed supply chain, a supply chain that pays utmost attention to the welfare of the animals and the environment in which they live: a slow walk through our pastures will be enough to appreciate the way animals are left to grow up here.
But you will also find the guarantee of the Zivieri name among the game, mushroom and truffle proposals: the forest undoubtedly represents another “market stall” from which we pay great attention to.
The tastes of NATURE, the tradition of Emilian CUISINE and the pleasure of HOSPITALITY in all its forms are the ingredients we have used in the creation of each dish, to try to convey all the magic of the adventure we have decided to embark on.
